 The 2003 vintage is a blend of 92% Syrah and 8% Mourvèdre – two grape varieties that are traditionally used in the South of France to make elegant, well-structured wines.
 The grapes for Hermit on the Hill Syrah 2005 were sourced from two vineyard blocks against the Paarl Mountain. The wine has a moderate alcohol of 14% and was matured in old French barrels for 24 months. Fining and filtering was kept to a minimum and the wine has also been kept back until such time as it developed the complexity associated with a mature, drinkable Syrah.
 On the nose the wine shows aromas of spices (cardamom, white pepper, cumin, fennel), “fynbos†and lavender that follows through on the palate with a clean and refreshing red berry finish. The tannins have softened out and the wine will be at its peak between 2009 and 2012.
